The classic gingerbread man is a staple of the holiday season that combines culinary charm with artistic creativity. These are not just cookies to eat, but also to decorate. This recipe will yield delicious, cannabis infused gingerbread stoners, complete with frosting joints and pot leaf emblems.

Ingredients:

  • 1 egg
  • ½ cup softened cannabis infused butter
  • ¾ cup dark brown sugar (packed tightly)
  • 1/3 cup molasses
  • 2 tablespoons water
  • 2 2/3 cups flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • ½ teaspoon cinnamon, allspice and nutmeg
  • ½ teaspoon salt
  • Green frosting

Directions:

Begin by combining ½ cup softened cannabis infused butter and ¾ cup dark brown sugar in a large mixing bowl. Mix until the ingredients are fluffy. Next, beat in the egg, 1/3 cup molasses and 2 tablespoons water. Stir until well combined.

In a separate bowl, combine the remaining dry ingredients:  flour, baking soda, salt, ginger, cinnamon, allspice and nutmeg. Once combined, slowly stir the dry mixture into the creamed mixture in the large mixing bowl, adding a little bit at a time as you go. Mix together well until all ingredients are thoroughly combined.

Now that the dough is made, divide it into two separate portions and place in the fridge for 30 minutes to chill.

After 30 minutes, preheat the oven to 350 degrees and remove the dough from the fridge. Lightly flour a clean kitchen surface and then roll out each half of the dough into 1/8-in thick portions. Grease a baking sheet and set aside.

 Now it’s time to choose your cookie cutter! For this recipe, we are going to use a standard 4-in gingerbread man cookie cutter, but a pot leaf cookie cutter would also make a fine choice.  Place each cookie on the greased baking sheet, keeping them 2-in apart. Continue until all the dough is used, rerolling the scrapes of dough together until you can no longer cut any more shapes.

Place the cookies in your preheated oven and let them bake for 8-10 minutes or until golden brown with firm edges. Allow to cool on a wire rack.

Once the cookies are fully cooled, it’s time to decorate! Use an icing dispenser, or make one at home by cutting the corner off a plastic bag and filling it with your green icing. If you have trouble finding pre-made green frosting, simply use some green food dye to color some vanilla frosting.

 Now, get creative. Turn those little ginger people into stoners! Give them grins and little joints hanging out of their mouths, or perhaps a pot-leaf shirt. Think outside the box and let your gingerbread stoners show their ganja pride!
